Frozen or Fresh Sweet Corn (kernels from 3-4 ears of corn)

Unsalted Butter
1 Teaspoon
Cumin Powder

Onion Powder
1 Teaspoon
Tajin
1/2 Teaspoon
Cayenne Pepper Powder
1/2 Teaspoon
Paprika Pepper Powder
1/4 Teaspoon
Sugar
1/2 Teaspoon
Fine Sea Salt

Crumbled Feta or Cotija Cheese, plus extra for topping

Ear Grilled Corn, kernels remove from cob for topping

Recipe
Step 1
Heat olive oil in a large cast iron pan over medium heat.
Step 2
Add the onion, jalapeño and garlic. Cook until soft, aromatic, and translucent, without much browning.
Step 3
Add the corn and cook until lightly golden and slightly charred in spots. Remove from heat and let cool.
Step 4
In a small saucepan over low heat, melt the butter. Add cumin, Tajín, cayenne, paprika, sugar, and salt. Let the spices bloom gently until fragrant, making sure the butter does not brown. Transfer to a heat-safe bowl and let cool.
Step 5
In a large mixing bowl, combine the skyr, crumbled feta or cotija, and chopped cilantro. Mix well.
Step 6
Add the corn mixture and half of the spiced butter to the skyr mixture. Stir until fully combined.
Step 7
Transfer the elote skyr dip to your serving dish. Top generously with the extra grilled corn, crumbled feta/cotija, and fresh cilantro. Drizzle with the remaining spiced butter and finish with a sprinkle of paprika and Tajín.
Step 8
Serve with chips and enjoy!
