Glazed Lemon Poppy Skyr Snack Cake

Flour
1 1/2 Teaspoon
Baking Powder
1/2 Teaspoon
Baking Soda
3/4 Teaspoon
Salt
1 Tablespoon
Poppy Seeds
Lemon Skyr Glaze:
1 1/2 Cup
Powdered Sugar
1 Tablespoon
Lemon Juice
2 Tablespoon

Recipe
Step 1:
Preheat your oven to 350 degrees. Grease and line an 8 inch pan with parchment and set aside.
Step 2:
In a medium bowl add white sugar and lemon zest. Using your fingers, rub the zest into the sugar to help release the aromatic lemon oil form the zest.
Step 3:
Add the eggs and beat on medium high speed until the mixture is frothy and light in color.
Step 4:
Mix in the melted butter, oil, lemon juice and vanilla extract until combined.
Step 5:
Add the Icelandic Provisions Extra Creamy Lemon Skyr and mix on medium speed until smooth.
Step 6:
In a separate bowl, add the all-purpose flour, baking powder, baking soda and salt. Give all of the dry ingredients a good mix until combined.
Step 7:
Add in the dry ingredients to the wet ingredients and gently fold the batter until no dry flour pockets remain.
Step 8:
Add in the poppy seeds and mix to combine.
Step 9:
Let the cake bake for about 30-35 minutes or until a tester comes clean from the center of the cake.
Step 10:
Let the cake cool in the cake pan for about 15 minutes and then remove the cake from the pan and cool on a rack until it reaches room temperature, about 45 – 60 minutes.
Make the glaze:
Sif the powdered sugar into a medium bowl. Add the lemon juice, extra cream lemon skyr, and salt. Whisk everything until smooth and lump free.
Assembly:
Pour the glaze on the center of the cooled cake. Use an offset spatula or the back of a spoon to help spread it across the cake. Top with desired toppings like lemon zest, poppy seeds or sprinkles. Let the cake rest for about 5 -10 minutes so the glaze can set.
