
High Protein Creamy Mac and Cheese
Description
The secret ingredient to this super creamy high protein mac and cheese is none other than Icelandic Provisions Whole Milk Skyr! It’s simple and easy, with a bit of brightness from the skyr and crunch from the garlic breadcrumbs.
Ingredients
6 Ounces
Fusilli, Elbows, or Shells
Salt and pepper
3 Ounces
Shredded Cheddar Cheese
1/3 Cup
Icelandic Provisions Whole Milk Plain Skyr
1 Teaspoon
Buffalo Hot Sauce
1/4 Teaspoon
Mustard Powder
For the breadcrumb topping:
1 Tablespoon
Olive Oil
1/4 Cup
Panko Breadcrumbs
1/2 Teaspoon
Garlic Powder
Salt and black pepper
Recipe
Step 1:
Bring a large pot of water to a boil. Once boiling, generously salt the water and add the pasta. Cook until al dente, and reserve ½ cup pasta water. Remove the pot from the heat and drain the pasta, then return the pasta to the pot.
Step 2:
Meanwhile, combine grated cheddar, skyr, buffalo sauce, mustard powder, and a good pinch of salt and pepper in a small bowl.
Step 3:
Add 2 tablespoons of pasta water to the cheesy-skyr mixture until mostly smooth. Using a rubber spatula, transfer the mixture to the pot, toss vigorously to combine with the hot pasta until all of the cheese melts and the sauce is creamy.
Step 4:
If necessary, add a bit more pasta water to loosen the sauce. Taste and season again, then serve hot with a sprinkling of the garlic breadcrumbs.
Step 5:
Set a small skillet over medium heat and add the oil. Once hot, stir in the breadcrumbs, and toss to combine with the oil. Allow to cook until golden brown, about 2 - 4 minutes. Remove from the heat, then season with garlic powder, salt, and black pepper, and cool completely. Store in an airtight container for 1 - 2 weeks.
