Loaded Skyr Baked Potato
Description
There's nothing better than a loaded baked potato topped with creamy delicious Icelandic Provisions Whole Milk Plain Skyr. You won't miss the sour cream.

Russet Potato
1/2 Teaspoon
Canola Oil
3 Tablespoon
Icelandic Provisions Whole Milk Plain Skyr
Green onions
Dill
Salt and Pepper, to taste
Recipe
Step 1:
Preheat the oven to 425, and line a baking sheet with foil or parchment paper.
Step 2:
Prep the potato by washing and drying it well. Prick the potato all over with the tines of a fork.
Step 3:
Spritz or drizzle the potato with a little bit of canola oil and rub the oil into the potato all over.
Step 4:
Sprinkle a little bit of salt on the potato and rub it in as well. Place the potato on the prepared baking sheet and put them into the oven to bake.
Step 5:
Bake the potato for about 40 minutes. The potato skin should look shriveled outside and you should be able to easily slide a knife through the potato.
Step 6:
Once the potato is done baking, pull it out of the oven and make a slit on the top of the potato to help it release some heat. Once the potato has cooled a bit, using the tines of your fork to fluff up the inside of the potato. Use a scraping motion to break up the potato.
Step 7:
Top the potato with skyr, scallions, dills, fresh black pepper and a touch of salt. Enjoy!
