Pumpkin Spice Latte Loaf Cake

Description

This moist fall-themed loaf tastes a little bit like a pumpkin spice latte, thanks to the addition of pumpkin pie spice, pumpkin puree, and Icelandic Provisions Plain Skyr. For those with a penchant for sweeter treats, you can also opt for an additional maple glaze to enhance its sweetness!

Recipe
Step 1:
Set a rack in the middle of the oven and preheat to 350F. Grease a 9-inch by 5-inch loaf pan and line it with a parchment paper sling
Step 2:
In a medium mixing bowl, combine flour, sugar, baking powder, salt, pumpkin pie spice, and espresso powder.
Step 3:
In a separate large mixing bowl, whisk brown sugar, oil, eggs, skyr, pumpkin puree, and vanilla extract until smooth.
Step 4:
Fold the dry ingredients into the wet ingredients until just combined. Transfer the batter to the loaf pan and smooth the top with an offset spatula.
Step 5:
Bake in the oven for 50 - 60 minutes or until a toothpick inserted into the center of the loaf comes out mostly clean with just a few crumbs attached.
Step 6:
Cool for 10 minutes on a wire rack, then remove the loaf from the sling and allow to cool completely on the rack.
Step 7:
Whisk the powdered sugar with 1 tablespoon coffee, 1 tablespoon maple syrup, the skyr, and vanilla extract. It should be thick but still drippable. If it’s too thick, add the remaining coffee and syrup to thin it out. Pour the glaze over the loaf and allow to set for 5 - 10 minutes before slicing and serving.
