Spinach Artichoke Dip
Description
Dip into the holidays with a protein-packed twist! This Spinach Artichoke Dip is loaded with our thick & creamy, whole milk plain skyr and adds a whopping 17g of protein per serving. Perfect for jumpstarting your Thanksgiving festivities and keeping those cravings at bay until the turkey is served.
Ingredients

White onion

Fresh spinach
1 - 8 Ounces
Cream cheese
block, cubed
1/3 Cup
Icelandic Provisions Whole Milk Skyr
3/4 Cup
Shredded Mozzarella, divided
1 -14 Ounces
Canned Artichoke
can, roughly chopped
1/2 Cup
Grated Parmesan
Kosher salt, to taste
Fresh cracked pepper
Toasted baguette slices, for serving
Recipe
Step 1:
Heat oven to 375°F
Step 2:
Heat the olive oil in a large pan set over medium heat. Add the onions, and cook until translucent, about 5 minutes. Add the garlic and cook for an additional 30 seconds. Add the spinach to the skillet, into two additions. Letting the spinach wilt before the second addition. Season with a pinch of salt and a few cracks of pepper, and let it cook as needed until most of the liquid evaporates.
Step 3:
Reduce the heat slightly, to low and add the block of cream cheese to the pan, mixing until it melts and becomes smooth. Add the skyr & and ½ a cup of the shredded mozzarella, and mix in until the cheese has melted. Add the chopped artichokes and parmesan cheese, and continue mixing until and well combined. Taste the dip and season with additional salt and pepper as needed.
Step 4:
Transfer the mixture to an oven safe 3 qt capacity baking dish (or leave in the pan if oven safe). Smooth out the top and sprinkle the remaining mozzarella cheese over the top. Place the baking dish in the oven and bake for about 20 minutes, or until the dip is bubbling and the top layer of cheese has taken on a lovely golden brown color.
Step 5:
Remove from oven, let the dip cool slightly before serving with a side of toasted baguette slices.
